Chicken and Dumplings

  • Chicken cooked and cubed
  • 2 cans cream of chicken soup
  • 1 1/2 cups sliced carrots
  • 1 cups potatoes cubed
  • 4 cups chicken broth
  • 1/2 diced onion
  • 1 cup sliced celery
  • 1 bay leaf
  • 1/2 tsp poultry seasoning
  • salt (go easy on the salt!) and pepper

Combine the above into a big pot. Bring to a boil and gently simmer for 15 minutes. While that is happening mix up….

  • 2 cups flour
  • 4 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 2 TB butter
  • 3/4 to 1 cup milk
  • 2 tsp parsley

Mix to form a stiff moist batter.  Drop by spoonfuls into the soup.  Cover with tight fitting lid and cook without lifting lid for additional 20 minutes.

Turkey Soup

  • Turkey Carcass (thrown into crockpot the day you’ve picked it over, fill to the brim with water and cook it on low all night.  Next day strain it all into a separate big bowl, put the broth back into the crockpot and then you can pick out the meat to add back in. That way there are NO bones.
  • Throw in some cut up carrots, chopped spinach, black beans, corn, celery, onions, cooked noodles.
  • Add to taste…  garlic powder, season salt, poultry seasoning.
  • Add a can of cream of chicken soup to thicken it a bit and I like to dump in the leftover gravy to give it a really good flavor.
  • Keep the crockpot on low or warm until ready to serve.

Butternut Squash Chilli

  • One butternut squash (cut in half and cook face down, fill pan 1/4 with water @350 for 40 minutes) Peeled and cubed.
  • 1 can black beans
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • one each of yellow, red, and orange bell pepper, cut into large chunks
  • finely (I mean REALLY finely) chopped spinach
  • 1/2 onion
  • 3 cloves garlic (or equivalent in jarred garlic)
  • 1 lb pork or turkey or beef
  • 1 TB chilli powder
  • 2 tsp cummin
  • 2 tsp paprika
  • salt

Cook meat, add garlic, onions and peppers.  Cook until JUST barely tender.  Add the tomato sauce, diced tomatoes, rinsed and drained black beans and all seasonings.  Add in the cubed and cooked squash.   Heat it all up then serve with sour cream and shredded cheddar cheese.  (some corn chips too)
